Daftmill distillery

Daftmill distillery stands in the Howe of Fife, a low-lying area of farmland. It occupies a converted barn at Daftmill Farm, once a meal mill. The whisky licence came in 2005 and the first spirit ran on 16 December that year. All malt is un-peated and every grain is grown on the farm. Production is deliberately small, capped at 20 000 litres of alcohol annually. Its inaugural release was the Daftmill 2005 12-Year. The distillery is one of Scotland’s newest single malt sites. It belongs to the Lowland region, known for lighter whiskies. Farm-grown barley keeps the process self-contained. The first cask was filled on the same day the licence arrived. Every batch is aged in oak before release. The 12-year expression marked the distillery’s official debut. Visitors find a working farmyard with the old mill building now a stillhouse. Copper pot stills sit beside modern stainless steel washbacks. The quiet countryside surrounds the site, with fields stretching to the horizon. A small tasting room offers samples of the single malt. The farm’s own barley fields can be seen from the windows. The atmosphere is calm, far from crowded distilleries.
