Talisker distillery

Talisker distillery stands on the Minginish Peninsula of the Isle of Skye, beside the sea at Carbost. It is an island single malt Scotch whisky distillery operated by Diageo. The site was first leased in 1830 by Hugh MacAskill, who built the distillery the following year and named it after his estate. The whisky has been praised by commentators such as Jim Murray and forms part of Diageo’s Classic Malts series. The distillery uses water drawn from springs above the buildings through a network of pipes and wells. Five stills—two wash and three spirit—stand in the stillhouse, each fitted with traditional worm tubs. The distillery has a long history of rebuilding and expansion. After a fire in 1960 destroyed the stillhouse, five exact replicas of the original stills were made to preserve the flavour. The stills were later converted to steam heating and the maltings floor removed. Production now reaches three and a half million litres of spirit each year. The malted barley comes from Muir of Ord, and the spirit is matured mainly in American oak casks. The water, drawn from Cnoc nan Speireag, flows over peat, adding extra depth to the whisky. Visitors find a working distillery with a visitor experience and a dining space opened in 2024 in partnership with The Three Chimneys restaurant. The site offers views across the sea and the surrounding hills. Bottlings range from the entry-level 10-year-old to rare 30-year-old releases and limited editions such as Talisker Neist Point and Talisker Wilder Seas. Around 50,000 people visit each year to see the stills, learn about the process, and taste the whisky.
